ADM Will Mass-Produce a Fermented Egg Protein With Startup Every
Agricultural giant ADM is partnering with startup Every to scale animal-free egg proteins made through precision fermentation. ADM will begin commercial production of Every's ingredient, OvoPro, at its facility in Clinton, Iowa. The protein is designed to replicate egg functionality — binding, gelling, foaming and whipping — and carries a PDCAAS of 1.0, the highest protein-quality ranking. It is described as vegan and cholesterol-free, with applications across frozen foods, sweet baked goods, pastas and beverages. Every says OvoPro is the first egg alternative produced through precision fermentation.
Demand appears to be climbing. According to a prior company release, Every's orders in the first four months of the year reached 550% of its total for all of 2025, and the company has announced a manufacturing expansion with partner Huvepharma to quadruple capacity. Kris Lutt, ADM's vice president for innovation and growth, is named on the ADM side. Ardent Mills, with its Egg Replace product, is among other players in the space.
Eggs are a staple protein whose price has swung sharply — driven up by bird flu outbreaks before declining significantly from 2025 records. A fermented alternative that matches egg function without hens could stabilize supply for food manufacturers and reduce the land and animal footprint of a widely used ingredient, which matters most when disease disrupts flocks.
What to watch is whether production actually scales at the Iowa plant and whether OvoPro reaches cost parity in real products. The 'first' claim and the 550% order figure both come from Every, not independent verification, and commercial output at the new facility has yet to be demonstrated.
