Brazilian researchers patent application targets plant-based meat flavor gaps
Brazilian researchers from Unicamp and Good Food Institute Brazil filed a patent application with the World Intellectual Property Organization for a fermentation process using food waste (potato peels, oat husks, açaí residues) to create natural aromas for plant-based meat. The method employs solid-state fermentation with *Trametes villosa* fungi to produce passion fruit-like aromas from agro-industrial waste substrates. Heating the oat husk-fermented product for one minute in a microwave transforms it into a meat-like aroma. This innovation directly addresses the 30% liking gap in plant-based meats observed in a single US taste test from 2025, where 68% preferred conventional meat versus 30% for plant-based options. The process specifically targets off-flavors and aftertastes that occur five to six times more often than animal proteins, aiming to improve sensory profiles without artificial additives by utilizing waste streams.
The patent application is pending, not yet granted. Crucially, meat-like aromas were achieved only through oat husk fermentation; sulfur-rich substrates did not produce meat aromas. While this could reduce food waste costs by repurposing agricultural byproducts, scaling the technology to impact affordability requires further validation beyond the single 2025 study. This approach moves abundance by potentially making plant-based proteins more palatable without additives, lowering the barrier to adoption for food-insecure populations who rely on affordable protein sources.
